Pea and Ham Soup
Pea and Ham Soup (serves 6-8)
2 tbsp olive oil
30g butter 1 onion, roughly chopped
1 potato, chopped
1 ½ tsp ground cumin
900g frozen peas
1 l stock made from ham bone or ham stock cubes
250g ham hough
Cream (to serve)
Ground black pepper
- Heat the oil and butter in a heavy-bottomed pan. Add the onion and potato and stir. Add the cumin and stir for a minute to release the aroma.
- Add a splash of water and cover. Sweat for about 20 minutes, adding a splash of water every so often to prevent it catching on the bottom of the pan.
- Add the peas, stock, and seasoning and bring to the boil. Simmer for 3 minutes and leave to cool. When at room temperature,purée in a blender. Serve with a swirl of cream and cooked ham on top.
